
On this post I’d like to share my current favorite pour-over recipe.
I personally call this the Threequal recipe. Three equal pours for a balanced cup.
It’s quite simple to do, doesn’t involve complicated mental math, and IMO produces a very balanced cup of coffee. Enough acidity, enough body, enough sweetness.
The recipe
- Bloom with ⅓ of your target brew water. Follow this tip to see how I calculate my bloom time for different beans.
- Second pour using ⅓ of the water.
- Once you see the coffee bed, pour the last ⅓ of the water.
For example, I brew 18 g of coffee with 300 g of water:
- Bloom with 100 g of water.
- 100 g second pour.
- Last 100 g third pour.
I usually use this recipe with this brew ratio only, but now that I’m using the Hario Polaris, I can easily adapt it to other brew ratios. I just need to pay attention to the poured water percentage 😁
The result is clean, sweet, with a gentle acidity that doesn’t overpower.
